Knives
The blades presented in these pages were created with great respect for the practical uses to which they were originally put. There are two main types of knife: the “da scanno” (throat-cutting) blade, with its point particularly sharp for butchering, and the “da scuoio” (flaying) blade, with its typical bulging shape that facilitates the task of skinning an animal without damaging the hide.

Our knives are not mere reproductions of the historic models present in the region; apart from the classic “
resolza” with its characteristic layered blade, all Salaris knives have been revised and updated in their form, while at the same time conserving the simple, spring-less structure of the classic Sardinian knife.

The scarcity -- or more accurately, the complete absence -- of historical documents that explain why the forms of the Sardinian knife vary according to region leaves room for a thousand hypotheses. Specific knife forms most likely evolved to meet diverse needs of an agro-pastoral or exclusively agricultural economy, and these forms were then further influenced by the Spanish and Arab dominions endured by the Sardinian population. It would be rash to claim that a particular knife-form belonged exclusively to a single village or a single zone of Sardinia; but with time, certain forms became associated with specific production centers, where they are still made today. The “resolza”, the Sardinian knife par excellence, is surely the result of such a course of evolution, and it is very difficult for anyone to attribute or claim its paternity.

The materials used in the making of our knife blades are carbon and stainless steels. The handles are made from either horn -- ram or wild moufflon -- or high-quality wood, with fittings in brass, nickel silver, and precious metals.
